When I change a topic and subscribe to it I will receive the retained data, great. My project subscribes once at power-up and it is possible that nothing will changes in the following days. If my target resets - for whatever reason - it will subscribes again, but if the first subscription was days ago I will receive no retained data.

Yesterday server was restarted due to maintenance. Maybe this is the reason why you do not receive old retained data.
No problem ofcourse, but can you confirm that there are no time limitations on subscriptions and retained data? So as long as I stay connected to EasyIoT with my MQTT client I will get updated topics and retained data on a quick reconnect?
