Castellum IGP Cité de Carcassonne 2019 – 75cl vin rouge Under 25 The work begins in the The work begins in the vineyard with a selection of the plots best suited to producing this type of wine The grapes are harvested largely by hand A double sorting system is carried out in the vineyard and in the cellar Vinification is traditional and the grapes are therefore destemmed before the maceration phase begins Since for over a thousand years the vineyard is ideally situated between sea and mountain on a terroir of limestone and schists Comments from our Head Sommelier: Merlot and Malbec thrive there particularly well
